A salt cured cut of meat from the pig's belly and sides.  Similar to bacon but is more fatty and salty.  It is used to add flavor to sauces and dishes.  Available at grocery stores; ask at the meat counter if unable to find.  Salt pork, tightly wrapped, will keep in the refrigerator for up to 1 month.
Similar to bacon but has a much higher fat content and is not smoked.
