The common European hake is Merlucius vulgaris; the American silver hake or whiting is Merlucius bilinearis. Two American species (Phycis chuss and Phycis tenius) are important food fishes, and are also valued for their oil and sounds. Called also squirrel hake, and codling.

Various members of the cod family are known as hake and are available fresh or frozen, whole or as steaks and fillets. Mild, subtle flavour suitable for frying, poaching and in soups.
Of the same family as cod and similar in many respects, hake is more coarsely grained with a slightly stronger flavor. Snow Hake has white flesh that is low in fat and can range in texture from soft to firm. Can be prepared like cod, which is versatile and promises excellent results after baking, poaching, sautéing, grilling, and roasting. Look for glistening, pure white flesh that is free of signs of dryness, grayness, and browning. Smell for seawater freshness.
