A part of the maturation process that takes place in the bottle before release. It allows the wine to reach chemical and organoleptic stability, and to develop more complex aromas and flavors.
The development of aromas/flavours (i.e. complexity) as wine matures after bottling. As a negative, bottle-age means a wine with stale, empty, or even off odours.
