Literally "white of whites", this is the French term for white wine made from light-skinned grapes. Most frequently it is associated with Champagne where much white wine is made from dark-skinned grapes. See blanc de noirs.

A term originally used for Champagne and other sparkling wines, now more generally for white wines made exclusively from white grapes. This is not always the case, as red grapes generally have white juice. The colour of red grapes comes from macerating the red skins in this white juice; and a white wine can be made from black grapes by separating the juice quickly from the skins. In Champagne, blanc de blancs means that the wine was made exclusively with the region's only white grape, the Chardonnay.
