Gibbing is what happens when a character is blown to smithereens. This is usually depicted as unrecognizable bloody chunks flying everywhere. (A gib is one of these small chunks.) A soldier gibs after being hit by a grenade. From Half-Life.

to gib someone means to blow them into tiny kibbles + bits (meow meow meow meow!). gib is pronounced "jib", not "gib" with a hard g. according to id's adrian carmack, who coined the word, "Gib is short for gibblet.
