Young onions picked before the bulb has formed. May be eaten raw or cooked. Scallions have a milder flavor than onions. Purchase scallions with green crisp tops and white bottoms. Store scallions in a tightly closed bag in the refrigerator for up to 1 week.

Also called green onions, they are available year round, keep for 3 to 5 days in the refrigerator and add a fresh mild onion flavor to dishes. It is best to add them late in the cooking time of a dish so they will maintain their flavor.
