Yatsuhashi (八ツ橋 or 八橋) is a Japanese kind of confectionary, a form of miyagegashi (sweet sold mainly as a souvenir) only sold in Kyoto. It's made from jōshinko (a pulver made from rice), sugar and cinnamon. Baked, it is similar to senbei.
